The 2018 World Butchers' Challenge - the biggest competition in WBC history - was hosted by Meat@IFEX and Butchery Excellence International.
What is the World Butchers' Challenge?
The World Butchers' Challenge was created to develop an environment where butchers strive to exceed current industry practice in the areas of general workmanship, meat cutting, displaying and creativity!
Who competed in 2018?
The 2018 World Butchers’ Challenge hosted twelve teams from across the globe: Australia, Bulgaria, Brazil, France, Germany, Great Britain, Greece, IrelandItalyly, New Zealand, South Africa and the USA.
What did the competition involve?
The competition took place over three hours and fifteen minutes with teams given a beef side, a side of pork, a full lamb carcass and five chickens. Teams were allowed to provide their own seasonings, spices marinades and garnish to finish product and can bring props like plates, bowls, signage etc.
Independent judges - one from each country that competed - judged and scored the teams based on butchery skill, innovation, overall finish and display.
The timings for 2018?
The World Butchers' Challenge 2018 took place during Meat@IFEX. Juniors competed on Tuesday 20 March and seniors on Wednesday 21 March.
